It's a nice timber, used a lot in Australia for flooring for many years. It's termite proof which is a big bonus in Australia. I've also seen many kitchens fitted out with Cypress cupboards, very striking.
There aren't many problems in Australia with Cypress flooring, but not sure what affect climate would have. It sounds like you are taking all precautions and are doing it properly.

I Fix this type of things all the time The only reason your floors warp like that you have a leak somewhere and if you don't stop it fast! it will cause more damage? i would look under the house its probably a pipe their plastic and leak sometimes? look under sinks run the water! stop the water leak first ! and start drying things out with fans And remove wet instillation anyway the floors have to be cut out and replace their is no way to flatten them out again you have a big problem good luck
